If you use vegetable oil or shortening for deep-frying you can run it through a coffee filter and use it various times as long as it doesn’t smell burnt. This is what restaurants do. They use oil an average of 4 days, but that is frying 12 hours a day compared to a few things at home.

I just have 3 cups of it, I put it in a bottle and stuck it in the fridge for now. It seemed to be still good. Thanks to everybody who made a suggestion. I'll look into the restaurant option.

That is really a bad idea, regardless if restaurants do it. Frying foods can produce a carcinogenic chemical called acrylamide, which can build up in the oil. Not very healthy.

AACC International Forms Committee to Evaluate Swedish Study on Acrylamide in Foods

A group of AACC International experts led by David Lineback, chair of AACC International’s Scientific Advisory Panel, is evaluating the claims brought forth by Stockholm University and the Swedish National Food Administration that acrylamide, a potential cancer-causing agent, may be formed when carbohydrate-rich foods such as rice, potatoes, and cereals are fried or baked. However, the foods showed no traces of acrylamide when analyzed in their raw state or when boiled. The U.S. Environmental Protection Agency classifies acrylamide as a “medium hazard probable human carcinogen.”

Background Hb adducts from acrylamide show a general occurrence, in humans at levels possibly associated with a relatively high cancer risk. Acrylamide is present in tobacco smoke. In wild animals lower adduct levels than in humans are observed. These facts indicate a role of cooking in acrylamide exposure, a hypothesis tested in animal feeding experiments. Rats fed heated feed showed increase of several adducts including un about 10 times increase of the adduct levels from acrylamide, identified by MS-MS in comparison with authentic standards, with confirmation by analysis of acrylamide in heated feed. In follow-up studies with heated foods, high acrylamide formation was found in carbohydrate-rich foodstuffs as compared to low levels in protein foods. Acrylamide was formed above 120°C in a temperature-dependent manner.
