Reclaiming The Blade
It's currently available to stream on Netflix. For those who have it, or an alternative means to watch it, do so. It really focuses on Western Martial Arts and culture with most of the people in the film admittedly staying true to their heritage, not Asian styles.

I my self am a bit of a knife lover, so this show caught my attention.
